Help me choose SOT Kayak

I'm interested in building a SOT kayak for recreation and fishing in the creeks and ocean where I live in SC. I'm 6'5" 225lbs with long legs. Would the Sabola 12 be tight for me plus fishing gear? I'm thinking either the bluefin, sabola, or wadefish but I'm having a hard time choosing between the three and I'm not sure the pros and cons of each. Any help would be appreciated.

Sabalo 15: Tracks very straight. 2nd generation SOT design

Wadefish: Lower profile, fast. 3rd generation SOT design

Bluefin: open cockpit config, very customizable. 4th generation SOT design. The lightest of the three choices. I've had one builder who was 6'5 fit in it.

Ok, is anyone aware of a build log of the standard bluefin here or on another forum? I've tried searching and only found the 12' and tandem.

I wouldn't build anything under 15 foot anymore...heck by the time a creek gets under 20' wide it's about at it's end any way....And the bluefin makes more use of the total width of the boat inside the cockpit rather than having dead space between the hull-side and the inner side wall of the other designs...I don't know the length of the cockpit but the sides are a good place to store the rods....

Note the J hook on my TV 15-29 up under the tumblehome panel holds a fishing rod snug against the side...

Yeah, I think I've settled on the bluefin. I wish I could find a build log to reference but maybe I'll have to document mine for others to use. Anyone have a link for the hatches pictured on the bluefin? I've seen the round hobie hatches before but where is the best place to source the square hatches. Also best epoxy source?
