Soon to be Laker guy, introduction.

Hello, Everybody!
Long ago I designed and built plywood kayak, 12.5' long, 22" beam, 18.5 degrees dihedral on the bottom.
Tracks very well, fast, stable. It was a pure good luck, because myself and Hydrodynamics are two big differences.
My wife loves the kayak, and I stay way behind on the piece of plastic. Need to build new NICE kayak.
I don't want the pain of adjusting and trimming panels for chines to fit, again, since no plans of old beauty survived.
It took me a long, long time to come across Laker 13 on the net. Perfect fit.
While I am waiting for the plans to arrive, I acquired 4mm okoume, and I am studying free plans, and here is, what bugs me:
it seems to me that Laker 13 will tower over the surface of the water almost as aircraft carrier.
I am under 170 pounds, my wife is even smaller. We probably will not go on the water, when the weather (wind, waves) is really bad.
Can I cut off an inch and a half or an inch from the height of the side panels, without asking for trouble?
(The resulting adjustment of deck panels does not scare me).
What do you think?
