Can I expect any UV damage on epoxy after 3 days of exposure? Or should I risk applying at least one coat of varnish on 10-day old expoxy?

I think you'll be ok for 3 days. When you do get ready to varnish, you'll want to rough up the surface with about 100 grit to ensure a good bond.

Epoxy in the sun for 3 days or Varnish on 10-day old epoxy??
